Helping To Clean


Egypt is dusty, but we are at one end of the Sahara, so it's expected. When people buy dry goods like beans or rice in bulk, they have to be sifted and washed to get the ambient sand and dust out. Even packaged rice has to be washed thoroughly. So sieves are important and they are made by hand by people like these.

How interesting. . .You know, those of us who live in the west give no thought to certain conveniences that we have. We go to the grocery, buy rice or dry beans, etc, and cook it. We would never think that someone would have to clean something like that before cooking it. I lived in Mexico for a time, and found this true, too. I see you're Canadian by birth. Was it hard for you to adjust?

I'd also spent time in Mexico and my first response to Egypt was how extraordinarily like Mexico it was. I've always liked real food more than prepared food so I found the transition easier perhaps. You get used to sand everywhere and at least it's dry. We were in Alexandria for the first five years and there it is MUCH less dusty than in Cairo. But I spent my childhood in southern California and Mexico, so the adjustment was much less.
