I have some visitors here and as we were returning home, quite hungry after a 3 hour ride, we encountered our sweet potato seller and gave him directions to the farm. My staff had lunch ready for us but we still bought some of the roasted sweet potatoes. The oven set up is quite interesting.

We had roasted sweet potatoes in Khan el Khalili last year when we visited Cairo. The roaster is very interesting. All your pictures are bringing back such happy memories of the few days we spent in Cairo. Everyone must visit Egypt at least once in their lifetime. Don't be afraid, use common sense. It's so educational and enjoyable as well.
It looks a little primitive, but, hey, if it works. I'm not sure I've ever tasted roasted sweet potatoes...sounds delicious!

I must agree with annechung. I've been living in Europe for my whole life and have egyptian parents. I need to visit egypt at least once a year to get an energy-boost. :)
Believe it or not, I've never tried the roasted sweet potatoes in Egypt, only tried it once at my place. But thank you for reminding me, I will try it this summer! :)

Roasted sweet potatoes are the "staff of life" in the Southeast United States. They are loaded with iron and all kinds of B-complex vitamins. Besides, they taste great. Love the photo.
